A man collects lumps of Chios Mastiha, the dried resinous sap of a mastic tree (Pistacia Lentiscus var. Chia) using a special tool to remove it from the bark. The sap oozes from scratches in the bark, that can be natural but are often made by harvesters, and once dried and processed is collected and sold for culinary and cosmetic use.
